Following a long cool and moist growing season giving lots of concerns with disease pressures there was the most amazing late summer and fall. Long hot and sunny days with temperatures in to the 30.C range gave us an amazing period to catch up and enjoy an extended ripening period, giving grapes with balanced sugar and acid and lots of flavour.
Grapes were hand picked in beautiful condition at Vagner Vineyards in Niagara on the Lake.
Fermentation was completed in small bins with manual punch downs 2-3 times each day. After 21 days on skins the wine was pressed off and moved in to older French oak barrels for aging. Wine was aged for 20 months in the barrels on the fine lees before bottling.
Dark, rich colour with aromas of ripe black cherry and raspberry and violet notes. The palate is dry with rich fruit flavours, spice notes and cooked plum on the finish. A beautiful texture with balanced tannins. Perfect compliment to beef tenderloin or a Charcuterie platter.
