Growing conditions throughout the spring and summer were dry and very warm through May to late August giving great optimism for the harvest of 2018. Late August and in to September was extremely hot, this produced severe thunderstorms with some very heavy rains. The humidity levels remained high throughout September giving some concern for breakdown in many varieties of grapes. Cabernet Franc for this wine was grown along the shores of Lake Ontario, cooler nights and light lake breezes help maintain fresh acidity and bright fruit flavours in the grapes.
The grapes were harvested in good condition, crushed and destemmed before being pumped to tank. The must was kept cool for 48 hrs before 20% of the juice was racked from the skins, transferred to tank for fermentation using a selected yeast. A cool fermentation helped keep the flavours fresh and balanced.
A pale cherry skin colour with orange hues, the aromas and flavours are of wild strawberry and raspberry, a dry wine with a rich texture on the mid palate, a balanced acidity brings a mouth-watering finish with a red citrus note.
Pair this wine with a warm sunny day and a charcuterie board, or maybe a grilled white fish. This wine can also be enjoyed just by itself with good friends.
