winemaker's notes:

Following a fairly mild and dry winter the spring of 2016 was quite variable, with big swings it temperatures but very little rain. The summer was very warm and dry but with these deep rooted vines there was very little drought stress in this mature chardonnay vineyard. Warm and dry conditions continued through September and October giving great conditions at harvest.

Grapes were hand harvested in great condition, crushed and destemmed before a gentle pressing. The wine was then cold settled before being transferred to 3 and 4 year old  barrels for fermentation. Selected yeasts were used to ferment this wine giving forward tropical flavours and bright acidity. Wine lees were stirred weekly for 5 months following fermentation, building texture and balance in the wine. Malolactic ferment was completed in late spring following a dormant winter period.  The wine was racked from barrel in early August, settled in tank before being filtered and bottled.

Tasting Notes:

Rich tropical aromas with peach, apricot and ripe pear with butterscotch notes that carry through on the palate. A nice core of acidity is balancing the rich and creamy texture. An elegant wine that finishes well with citrus notes and hints of caramel and toffee. This wine will drink well now and will also cellar for the next 4-6 years.

winemaker's notes:

The summer was very warm and dry but with deep rooted vines there was very little drought stress in this mature chardonnay vineyard. Warm and dry conditions continued through September and October giving us some great conditions for harvesting these grapes.

Grapes were harvested by hand, crushed and destemmed before pressing. The wine was settled before being transferred to French oak barrels for fermentation (all barrels were 3 years old). The wine was fermented at cool temperatures using a select yeast. Malolactic ferment was not completed leaving this wine with freshness in this warmer than usual vintage. The finished wine was left to rest on its lees with minimal stirring for 17 months before racking to stainless steel tank. The wine was lightly filtered before bottling.

Tasting Notes:

The wine has beautiful aromas of ripe apple and pear with white peach notes. The palate has good texture with flavours of ripe white fleshed fruit, some spice and gentle oak notes. There is a fresh core of acidity that carries the flavours on a long finish with light citrus notes.

Warm and dry conditions continued through September and October giving us some great conditions for harvesting these grapes.

Grapes were harvested by hand, crushed and destemmed before pressing. The wine was then settled before being transferred to Canadian oak barrels for fermentation (two new barrels and two 3 year old barrels). After a long ferment at cool temperatures using a selected yeast, this wine was left to rest on its lees with minimal stirring for 9 months before racking to stainless steel tank. The wine was filtered before bottling.

Tasting Notes:

The wine has an intense aroma of pineapple and coconut, with hints of citrus peel. The palate has a beautiful richness that carries the flavours of roasted pineapples, baked apple and coconut spice. A fine balance of acidity leading to a finish of ripe, red citrus fruits.

Following a mild and dry winter the spring of 2016 was quite variable, with big swings in temperatures but very little rain. The summer was very warm and dry, but with deep rooted vines there was very little drought stress in this mature Syrah vineyard. Warm and dry conditions continued through September and October giving us some great conditions for harvesting these grapes.

Grapes were hand harvested on a beautiful sunny day in late October, crushed and destemmed before fermentation in small bins. Punched down by hand twice daily, extracting rich dark colour from the skins as well as intense flavours and some soft chalky tannin. After 20 days on skins the wine was pressed off the skins, settled in tank before transfer to barrel for completion of malolactic ferment. The wine was coarsely filtered before bottling.

Tasting Notes:

Dark purple colour with dark ripe fruit aromas with a hint of licorice and anise, a pretty floral, blue flower note too. Palate shows some spicy dark fruit with just a touch of vanilla, reminds me a lot of Mom’s Christmas cake. Nice balance of acidity with a citrus note on the finish.

The summer was very warm and dry but, with the deep rooted vines there was very little drought stress in this mature Pinot Noir vineyard. Warm and dry conditions continued through September and October giving us some great conditions for harvesting these grapes.

Grapes were crushed and destemmed before being transferred to small fermentation bins. Following a few days of skin soak fermentation began with indigenous yeast (yeast that is naturally in the vineyard and on the grapes). The skins were punched down 2-3 time daily by hand during ferment, extracting colour, tannin and flavours from the skins and seeds. After 18 days of skin contact the wine was pressed off the skins, settled and then transferred to French oak barrels. Malolactic fermentation was completed in barrel. Following 10 months aging in barrel the wine was bottled without fining.

Tasting Notes:

Light colour with cherry, wild strawberry and hint of orange rind on the nose, with a little earth and beetroot note. The palate is pretty with a nice texture and a beautiful balance of acidity bringing minerality to the mid palate and a crunchy finish.

winemaker's notes:

The weather was very up and down in late winter and spring with wild swings in temperatures. A wet June was followed by a very dry July, but, all in all the growing season was very good. A near perfect fall season gave us ripe, balanced fruit at harvest time. After harvesting the grapes were destemmed and crushed and left to cold soak for 4 days before, extracting colour and flavour from the skins before fermentation. After 24 days on the skins the wine was pressed off into tank to settle before it was racked into barrel. the wine was then left to mature over the next 13 months in older French oak barrels before bottling.

Tasting Notes:

Deep rich red colour with aromas of crushed raspberries and red plum with just a hint of purple flowers. The palate has good texture with ripe raspberry and black cherry with a hint of chocolate and sweet vanilla notes. A freshness of acidity on the finish that is balanced beautifully by soft tannins.

winemaker's notes:

Following a cool, wet growing season with many challenges with humidity and rains the sun finally shone on the vineyards in August and on in to the fall with many days in September reaching 30.C giving us great opportunity to let grapes hang a mature to perfect ripeness in the Sauvignon Blanc.

Two pickings of grapes – the first when the grapes had good ripeness with a fresh acid balance, these grapes were skin soaked for 36 hours before pressing, giving a more intense green character, extracting a citrus peel note and an edge of bitterness (in a nice way). After pressing off, the settled juice was racked to barrel for fermentation and aging.

 The second pick brought ripe white and yellow fruit flavour to the wine with a softer feel. These grapes were harvested and pressed right away, maintaining the freshness. The juice was cold settled for 3 days before racking off the heavy sediment where it was then inoculated with a selected yeast. Ferment was cool and slow, extracting beautiful ripe tree fruit aromas. The wine remained on the fine lees after ferment with lees stirring for following 2 months.  The wines were blended together prior to filtering and bottling.

Tasting Notes:

Beautiful aromatics showing tree fruit, melon and grassy notes with a floral note of blue flowers, the palate has flavours of apples, kiwi, lime and white grapefruit. Also a  herbal note and  a nice minerality too. There is a wonderful texture that carries this wine in the mid palette and the wine finishes with a big note of citrus peel. Serve this wine with asparagus  or pea-shoot dishes, would also pair really well with lighter fish dishes, oysters or some grilled squid.
