winemaker's notes:

Following a fairly mild and dry winter the spring of 2016 was quite variable, with big swings it temperatures but very little rain. The summer was very warm and dry but with these deep rooted vines there was very little drought stress in this mature chardonnay vineyard. Warm and dry conditions continued through September and October giving great conditions at harvest.

Grapes were hand harvested in great condition, crushed and destemmed before a gentle pressing. The wine was then cold settled before being transferred to 3 and 4 year old  barrels for fermentation. Selected yeasts were used to ferment this wine giving forward tropical flavours and bright acidity. Wine lees were stirred weekly for 5 months following fermentation, building texture and balance in the wine. Malolactic ferment was completed in late spring following a dormant winter period.  The wine was racked from barrel in early August, settled in tank before being filtered and bottled.

Tasting Notes:

Rich tropical aromas with peach, apricot and ripe pear with butterscotch notes that carry through on the palate. A nice core of acidity is balancing the rich and creamy texture. An elegant wine that finishes well with citrus notes and hints of caramel and toffee. This wine will drink well now and will also cellar for the next 4-6 years.

winemaker's notes:

The growing season was very changeable with a very wet June followed by a dryer than normal July. August and September were almost perfect giving great optimism for the harvest of 2015.

With beautiful warm conditions through the fall the grapes were in perfect condition at harvest with great balance and flavours.

Grapes were crushed and destemmed before gentle pressing, the juice was cool settled before transfer in to small French oak barrels for fermentation, two selected yeast were used.

Following a slow, cool ferment the wine lees were stirred weekly for 6 months, helping to developing a beautiful texture and balance in the wine. After 20 months in barrel this wine was racked from the lees and transferred to tank, after which it was lightly filtered and bottled.

Tasting Notes:

This wine has a big nose of ripe peach and apricot with exotic spice notes. The palate is very rich and soft with ripe tropical fruit, caramel, butterscotch and vanilla notes. Lots of texture that is balanced by some bitter citrus peel notes on the finish. A wine to enjoy now but will age well for 3-5  years in the cellar.

Enjoy this wine with rich fish dishes or roast turkey on those special holidays.

Warm and dry conditions continued through September and October giving us some great conditions for harvesting these grapes.

Grapes were harvested by hand, crushed and destemmed before pressing. The wine was then settled before being transferred to Canadian oak barrels for fermentation (two new barrels and two 3 year old barrels). After a long ferment at cool temperatures using a selected yeast, this wine was left to rest on its lees with minimal stirring for 9 months before racking to stainless steel tank. The wine was filtered before bottling.

Tasting Notes:

The wine has an intense aroma of pineapple and coconut, with hints of citrus peel. The palate has a beautiful richness that carries the flavours of roasted pineapples, baked apple and coconut spice. A fine balance of acidity leading to a finish of ripe, red citrus fruits.

Following a mild and dry winter the spring of 2016 was quite variable, with big swings in temperatures but very little rain. The summer was very warm and dry, but with deep rooted vines there was very little drought stress in this mature Syrah vineyard. Warm and dry conditions continued through September and October giving us some great conditions for harvesting these grapes.

Grapes were hand harvested on a beautiful sunny day in late October, crushed and destemmed before fermentation in small bins. Punched down by hand twice daily, extracting rich dark colour from the skins as well as intense flavours and some soft chalky tannin. After 20 days on skins the wine was pressed off the skins, settled in tank before transfer to barrel for completion of malolactic ferment. The wine was coarsely filtered before bottling.

Tasting Notes:

Dark purple colour with dark ripe fruit aromas with a hint of licorice and anise, a pretty floral, blue flower note too. Palate shows some spicy dark fruit with just a touch of vanilla, reminds me a lot of Mom’s Christmas cake. Nice balance of acidity with a citrus note on the finish.

Following a fairly mild and dry winter the spring of 2016 was quite variable, with big swings it temperatures but very little rain. The summer was very warm and dry but, with the deep rooted vines there was very little drought stress in this mature Pinot Noir vineyard. Warm and dry conditions continued through September and October giving us some great conditions for harvesting these grapes.

Grapes were crushed and destemmed before being transferred to small fermentation bins. Following a few days of skin soak fermentation began with indigenous yeast. (yeast that is naturally in the vineyard and on the grapes) The skins were punched down 2-3 time daily by hand during ferment, extracting colour, tannin and flavours from the skins and seeds. After 18 days of skin contact the wine was pressed off the skins, settled and then transferred to French oak barrels. Malolactic fermentation was completed in barrel. Following 10 months aging in barrel the wine was bottled without fining.

Tasting Notes:

Light colour with cherry, wild strawberry and hint of orange rind on the nose, with a little earth and beetroot note. The palate is pretty with a nice texture and a beautiful balance of acidity bringing minerality to the mid palate and a crunchy finish.

winemaker's notes:

The weather was very up and down in late winter and spring with wild swings in temperatures. A wet June was followed by a very dry July, but, all in all the growing season was very good. A near perfect fall season gave us ripe, balanced fruit at harvest time. After harvesting the grapes were destemmed and crushed and left to cold soak for 4 days before, extracting colour and flavour from the skins before fermentation. After 24 days on the skins the wine was pressed off into tank to settle before it was racked into barrel. the wine was then left to mature over the next 13 months in older French oak barrels before bottling.

Tasting Notes:

Deep rich red colour with aromas of crushed raspberries and red plum with just a hint of purple flowers. The palate has good texture with ripe raspberry and black cherry with a hint of chocolate and sweet vanilla notes. A freshness of acidity on the finish that is balanced beautifully by soft tannins.

winemaker's notes:

A fairly mild winter was followed by a cool, wet spring and some late frost, causing initial concern for Niagara winemakers. June and July however were very warm and just above average rainfall followed by a hot dry summer giving us excellent growing conditions. Harvest slowed in October due to some wet days, pushing the harvest of late-ripening varieties into late in the month and even early November. Grapes were crushed and destemmed before transfer to fermentation tanks with yeasts were selected to bring out the fresh red fruit character and spicy nature of a cool climate Cabernet Franc. After 23 days of skin contact, the wine was gently pressed off the skins, returned to tank for settling before being transferred to barrels. This wine was then barrel-aged for 30 months before bottling.

Tasting Notes:

An elegant and very pretty wine with aromas and flavours of ripe cherry and raspberry with a hint of cedar, tobacco and lovely savoury notes. The palate has a beautiful texture with soft, chalky tannins that lead to a long finish. A wine that will match perfectly with fresh Ontario lamb or Muscovy duck dressed with a local berry based compote. Also a great wine to enjoy after a meal with aged cheddars or creamy blues.

winemaker's notes:

Winter and early spring were relatively mild with not a lot of moisture, this was followed by a much drier than normal weather pattern and significantly warmer temperatures. This was a trend that continued throughout the growing season. Very little rain throughout the summer was quite a concern by mid August. With all this great weather harvest started early, the weather cooperated through September and October, fruit quality was amazing. The Sauvignon Blanc grapes were harvested at two different times -  early to maintain the  fresh acidity with bright citrus flavours, the second harvest, some three weeks later giving much more tropical fruit character and a softer, round  texture, with a lower acidity. The grapes were destemmed and crushed before pressing, the juice was then fermented in both stainless steel tanks (80%) and neutral French oak barrels (20%) using a selected yeast  Following an extended time on its lees, with some stirring, the wine was racked and prepared for filtration and bottling.

Tasting Notes:

This  Sauvignon Blanc is showing aromas and flavours  of yellow apple, melon and just a touch of white pepper, there is a rich texture that is well balanced with acidity and  some citrus notes on the finish.
